Also known as Roman or Swiss browns, cremini are light to dark brown in color with a full-bodied flavor. Their firm flesh means they hold their shape well when cooked so they are an excellent choice for use in risottos, casseroles, or being stuffed and baked.
This mushroom is the most mature stage of the white button mushroom, with its cap fully grown out. The portobello is mild in flavor, but has a meaty texture. It works great as a substitute for meat in certain dishes, and is particularly deletable when grilled.
