Cabbage is round or globular shaped vegetable consists of clusters of thick leaves superimposed in over the other in compact layers,which often gives the leaf surface a gray-green or blue-green colour.
Recognizable for its oblong and flat shape, the head of the cabbage is large, up to 10-12 inches in diameter, with sizeable leaves. Beneath the top layer of dark green and purple outer leaves are broad, light green leaves with shallow veins. The cabbage offers a delicate texture and has a sweet flavor with mild grass-like undertones.
Cabbage Spring is dark green, coarser, often tougher and bright yellow internal color. It is more strongly flavoured than cabbages that form a closed head, Spring greens are packed full of iron and vitamins - a real 'super-food'.
Red cabbage is distinguished by its coloring, texture and flavor. Like Green cabbage it is rounded and wrapped in tightly wound waxy leaves. Their flavor is far more bold, cruciferous and peppery versus green cabbage.
